Baked Halibut

In a small mixing bowl, combine
½ cup mayonnaise
¼ cup grated Parmesan cheese
½ cup grated Swiss cheese

Spray a 9×13 baking dish and place your halibut filets in it. Then spread the above mixture all over the fish and bake at 350o for about 25 minutes.

Deep Fried Halibut
(Uses about 2 lbs of halibut)

First, skin your fish and cut it up into 1-inch chunks. Start your oil so it’ll get hot. (Our family really likes the flavor of peanut oil.) Then in a small bowl, combine
1 cup flour
¼ teaspoon salt
Pepper to taste
2 tablespoons of baking powder

Pour enough of any fizzy liquid (beer, clear soda, sparkling cider) into the dry ingredients until you get the batter consistency you like. When your oil is ready, squeeze a half of a lemon into the batter to give it lighter texture and dip your fish into the batter and deep fry. This is our family favorite!
